Tequila Lime Shrimp
2 Lbs. Medium Size Shrimp, peeled and deveined (can do 1 lb shrimp and 1 lb scallops too)
1/4 C Lime juice, freshly squeezed
1/4 C Cilantro, chopped
1/4 C Tequila
2 T Time Savor Gourmet Roasted Garlic Oil (or Olive Oil and 1 clove fresh garlic, minced)
1 T Time Savor Gourmet Garlic Gusto Seasoning (or 2 cloves fresh minced garlic & 1T minced onion)
1 T Time Savor Gourmet Southwestern Seasoning (or 1t cumin, oregano and cilantro)
1 Lg. onion, slivered
1 Green bell pepper, slivered
1 Red Bell pepper, slivered
3/4 C Mexican style cheeses (or mild cheddar)
Flour tortillas
Directions:
In a large mixing bowl, combine lime juice, cilantro, tequila, 1 Tablespoon Roasted Garlic Oil and TSG Seasonings. Mix well.
Add shrimp (and scallops if using). Toss to coat. Cover and set aside for up to 2 hours.
In a large saute pan, heat 1 Tablespoon of Roasted Garlic Oil. Add onions and peppers and saute for 3-5 minutes until peppers are soft.
Add seafood mixture (including liquid). Saute for an additional 3-4 minutes, until shrimp are pink and scallops are opaque.
Spoon mixture into a tortilla shell, sprinkle with cheese and fresh cilantro. Serve immediately.
Super Simple Guacamole
2 Avocados, large size and ripe (indents to the touch), chopped into 1/2-inch cubes
1/4 C Sweet onion, chopped
1/4 C Fresh cilantro leaves
1 Roma Tomato, large size, diced
3T Lime Juice, fresh squeezed
2T Time Savor Gourmet Southwestern Seasoning (or 1t cumin, oregano and cilantro)
Directions:
Add avocados to a large, non-reactive bowl. Using a potato masher or fork, smash avocados to make a chunky paste.
Add remaining ingredients. Toss gently with a fork to combine. Season with Salt and Pepper to taste.
Brown Rice and Black Beans
2 C Brown Rice
5 C Chicken Stock, low sodium, fat-free
1 15 ounce can black beans, rinsed well
Directions:
Pour chicken broth into a sauce pot and bring to a boil over high heat. Add rice. Reduce heat to simmer and cook for 45 minutes, or until liquid is absorbed.
Rice can vary so please refer to package directions for cooking times. Fluff rice with a fork. Add beans and gently combine. Serve immediately.
