Chardonnay Poached Salmon

1 C Water
1 C Chardonnay
1 Lg. Onion, sliced
1 Lg. Lemon, sliced
1 T Time Savor Gourmet Tricolore Peppercorns
1 tsp Time Savor Gourmet Natural Sea Salt
2 T Time Savor Gourmet Citrus Dill Blend
11/2 Lbs. Wild Caught Salmon

Directions:
In a large saute pan, combine water, wine, onion, lemon, peppercorns and salt. Heat to boiling. Reduce heat to simmer. Add fish and cover the pan. Poach the fish for 5-7 minutes, until opaque and flaky. Remove from liquid and serve immediately with Cucumber Dill Sauce. Serves 4.

Cucmber Dill Sauce

1 medium pickling cucumber, peeled and diced
1/2 C Light Sour Cream
1 T Cider Vinegar
12T Time Savor Gourmet Citrus Dill Blend

Directions:
Combine all ingredients together in a mixing bowl. Set aside for 20-30 minutes prior to serving to let flavors develop. Serve with fish.

Roasted Garlic Wilted Spinach

1 lb. baby spinach leaves, washed
1 T Time Savor Gourmet Roasted Garlic Oil

Directions:
Rinse spinach leaves well and shake gently to dry (do not dry too well though, the water will help it to steam.) In a large soup pot or skillet, add oil and heat over medium high until sizzling. Add spinach. Toss to coat in the oil. Cook for 1 minute. Cover with a lid and remove from the heat until ready to serve. Fluff with a fork and enjoy!

 

Home Made Decadent Chocolate Pudding Parfait

1/2 C Sugar
1/3 C High Quality Cocoa Powder
2 T Corn Starch
pinch of salt
pinch of Time Savor Gourmet Sinful Cinnamon Blend
2 C Fat Free Milk
1 tsp. vanilla
1 C berries, any variety
whipped cream
Directions:
In a 2 quart pot, combine sugar, cocoa, corn starch, salt and cinnamon. Mix well with a wooden spoon. Add milk. Heat over medium-high until boiling. Reduce heat and cook for 2 minutes, until mixture thickens. Remove from heat. Add vanilla. When pudding is cool, add 1/2 C pudding to the bottom of a parfait glass. Top with wihpped cream and berries. Add another layer of pudding, cream and berries. Repeat the process in other parfait glasses. Makes 2 large parfaits.
