Classic Chicken Soup (Crock-Pot Style)
3 Lbs. Chicken pieces (or 1/2 a roasting/frying chicken), bones and skin intact
3 Carrots, medium size, peeled & cut into 1/2-inch chunks
2 Celery stalks, medium size, trimmed and cut into 1/2-inch chunks
1 Onion, large size, diced
1 T Time Savor Gourmet Roasted Garlic Oil (or Olive Oil and garlic, etc.)
2 T Time Savor Gourmet Rosemary Versatility Seasoning (or sage, rosemary, thyme, black pepper. etc.)
6 C Chicken or vegetable stock, preferably low sodium and fat-free
Directions:
Place all ingredients in a large crock-pot style cooker. Turn on low heat for 8 hours, or high heat for 4 hours. Remove chicken from the cooker and set aside to cool. When cool, remove meat from chicken and put back in the soup. Serve hot.
Sweet Potato Soup with Ginger
1 T Time Savor Gourmet Lemon Oil (or Extra Virgin Olive oil and lemon, etc.)
1 Onion, large size, chopped
1 Celery stalk, medium size, diced
1 Carrot, large size, chopped
1 tsp fresh ginger, minced fine
4 sweet potatoes, medium size, peeled and cut into 1/2-inch cubes
1 white potato, medium size, peeled and cut into 1/2-inch cubes
6 C Chicken broth or stock, preferably low sodium and fat-free
1/2 tsp Time Savor Gourmet Sinful Cinnamon
1/4 tsp nutmeg
1 C Half and half, fat free
Directions:
Pour oil into a large saucepan and heat over medium-high heat. Add onion, celery, carrot and half of the ginger. Saute for 3-5 minutes until onions are translucent, but not brown. Add the potatoes, stock,
Sinful Cinnamon and nutmeg. Bring to a boil. Reduce the heat to simmer. Cover and simmer for 30 minutes. Remove pot from heat and stir in 1/2 c half and half. Using a stick (immersion style) blender (or by transferring soup into a food processor or blender- CAREFUL! Dangerous!) process until very smooth. Add remaining ginger and half and half. Season with salt and pepper to taste if deisred. Serve hot.
Creamy Tomato Soup
1 T Time Savor Gourmet Roasted Garlic Oil (or Extra Virgin Olive oil and garlic, etc.)
1 Onion, large size, chopped
2 T Time Savor Gourmet Garlic Gusto Seasoning(or fresh garlic, etc.)
2 T basil, fresh, chopped
1 C vegetable broth, low-sodium
1 T brown sugar
1 tsp Time Savor Gourmet Viva Italiano Seasoning (or basil, oregano, marjoram, etc.)
1 28-oz. can crushed tomatoes
1 28-oz. can diced tomatoes
1/2 C Half and half, fat free
1 C prepared pasta (preferably orzo)
Directions:
Prepare pasta according to manufacturer's directions. Drain and set aside. While cooking, pour oil into a large sauce pan and heat over medium-high heat. Add onion, Garlic Gusto and basil. Saute for 3-5 minutes, until onions are translucent. Add the broth, sugar, Viva Italiano and tomatoes. Bring to a boil.
Reduce the heat to simmer. Cover the soup and let simmer for 30 minutes. Remove pot from heat and stir in the half and half and pasta. Season with salt and pepper to taste if desired and serve hot.
