Episode 6 ~ What to do with all those Grapefruit?

These zesty recipes will have you thinking "outside the box!"

Recipes

Zesty Citrus Cupcakes

1 vanilla cake mix, any style (preferably french vanilla)
3 eggs
1/3 C Time Savor Gourmet Lemon Oil
3/4 C Grapefruit juice (freshly squeezed with pulp)
1/2 C Water 

Directions:
Preheat oven to 350 degrees. Add all ingredients to a large bowl, or into the basin of a stand mixer. Turn mixer on to medium speed for 1 minute. Scrape the sides of the bowl. Turn mixer onto high speed for 2-3 minutes, until batter becomes thick and fluffy. Line 2-12 count cupcake pans with paper cupcake liners. Fill each paper 3/4 full with batter. Bake for 12-15 minutes, until cupcakes are slightly golden and set in the center. Remove from pan and cool completely before frosting.

Grapefruit and Cream Cheese Frosting

1 8 oz. brick of cream cheese, softened (light or regular)
2 T Grapefruit juice, freshly squeezed
2 tsp grated grapefruit peel (for easy how-to, watch this episode on You Tube)
3 C Confectioner's Sugar
2 drops red food color

Directions:
Add all ingredients to a large bowl. Using a hand-held mixer, combine ingredients gently on low speed (this will keep the sugar dust to a minimum) until a thick frosting forms. Scrape the sides of the bowl and mix again for one minute to combine. If frosting is too thin, add a little more confectioner's sugar, a few tablespoons at a time. If mixture is too thick, thin with grapefruit juice, one teaspoon at a time. Yields 1 1/2 cups frosting, enough to do 24 cupcakes or one 9 x 12 cake.

Grapefruit Salad with Cilantro & Lime Dressing

1 large grapefruit
1 T Honey
1/4 C Cilantro, finely chopped
2 T lime juice, freshly squeezed
1 pear, cored and diced
1 apple, cored and diced
1 small jicama, peeled and diced
1 mango, peeled, seeded and diced  

Directions:
Cut grapefruit in half. Juice one half into a small bowl. Add honey, cilantro and lime juice. Whisk to combine. Set aside. In a medium-sized bowl, combine pear, apple, jicama and mango. Pour dressing over salad. Gently toss to coat. Makes a great side dish for grilled pork, chicken or fish.

 

Asian Inspired Chicken and Grapefruit Stir-Fry

1 tsp Time Savor Gourmet Roasted Garlic Oil
1 grapefruit, segmented (for easy how-to watch the episode on You Tube)
1 8 oz. can pineapple chunks, drained, juice reserved to yield 1/2 C
1/2 C grapefruit juice, freshly squeezed
1 T cornstarch
1 tsp soy sauce
1 lb boneless chicken, light or dark
1 T Time Savor Gourmet Garlic Gusto Seasoning
1/4 lb. snow peas, trimmed and washed
2 green onions, sliced fine
1/4 tsp red pepper flakes (optional)

Directions:
In a large wok (or deep skillet) heat oil over high heat. While oil is heating, combine pineapple juice, grapefruit juice, cornstarch and soy sauce in a small bowl. Whisk together to combine. When the oil is hot in the wok, add the chicken and Garlic Gusto Seasoning. Saute for 3-5 minutes until cooked thoroughly. Add the liquid, snow peas, pineapple, grapefruit and pepper flakes. Stir gently until mixture is thick and bubbly. Serve immediately over rice. S
