Beef & Guinness Stew
2lbs. Lean Stewing Beef
3 T Oil
2 T Flour
Pinch Cayenne Pepper
2 large onions, coarsely chopped
3 large carrots, peeled and chopped into 1-inch chunks
1 T Garlic Gusto (or a garlic clove)
2 T Tomato puree dissolved in 4 T hot water
1 1/2 C Guinness Beer
Directions:
Cut the meat into 1-inch cubes. In a large bowl, combine flour, cayenne and salt & pepper to taste. Place the chunks of meat into the bowl and toss them to coat with the flour mixture. Heat the oil in a 4 quart, heavy bottom stock or soup pot. Brown the meat on all sides. Add the onions, Garlic Gusto, tomato, Guinness and carrots. Cover with a litd and simmer for 2-3 hours on low. (NOTE- you can also do this in a crock cooker.) Season to taste with salt and pepper. Serve with yellowmeal biscuits and a salad.
Yellowmeal Biscuits
1 C Finely Ground Cornmeal
1 1/2 C Sour Cream (or Buttermilk)
2 C All-Purpose Flour
1 tsp salt
1 tsp Baking Soda
Directions:
Preheat oven to 450 degrees. Add your baking pan to the oven to heat. Add all dry ingredients to a large bowl and combine thoroughly. Add the sour cream to the center of the bowl and gently fold the ingredients together to make a dough. Turn the dough out onto a lightly floured surface and knead lightly. Place the dough onto the center of the hot baking pan and carefully flatten until it is 1/2 inch thick. Using a very sharp knife, gently scour an X onto the top of the loaf. Bake for 35-40 minutes in the oven. To test, use a skewer. Serve hot with butter & stew.
Apple Amber
1 lb. Sweet cooking apples (like macintosh)
1/2 C Sugar (plus 1/4 C for egg whites)
2 large eggs, separated whites and yolks
2 T lemon juice, freshly squeezed
Directions:
Preheat the oven to 350 degrees. Peel, core and slice the apples very thin. In a large frying pan, cook the apples in 3 T of water, stirring every now and then until they turn into a puree. Add the sugar, lemon juice and egg yolks. Mix well. Place the contents in an 8x8 baking dish and bake for 20 minutes. In the meantime, add the egg whites to a mixing bowl. Using a hand held mixer, whisk the egg whites until they are very stiff. Fold in the remaining sugar. Pour the whites over top of the baked apple mixture and return the dish to the oven for 10 minutes to brown the meringue. Makes 4-6 servings.
