Kickin' Cajun Recipes
TSG's Famous Cajun Shrimp
1/4 c. butter
2 T Garlic Gusto Seasoning
2 tsp. Kickin' Cajun seasoning
2 tsp. Worcestershire sauce
2 lb. fresh shrimp, peeled, deboned & cleaned
1/2 c. chicken broth
1/2 c. white wine
Heat butter in a large skillet. Add Garlic Gusto, Kickin' Cajun seasoning and Worcestershire sauce. Add shrimp and cook just until shrimp are pink and firm to touch. Add broth and white wine and heat just to boil, scraping bits from the side of the pan. Serve over rice on heated plates. Serves 4.
London Broil, Cajun Style
1- 1 1/2 lb. London Broil
2 T Kickin' Cajun Blend2
2 T. TSG Roasted Garlic Oil
TSG Natural Sea Salt and Tricolore Peppercorns
Heat grill to medium-high heat. Make a rub by combining all ingredients in a small dish and set aside for a few minutes to hydrate. If rub is a little too thick, add a little water and mix well. Rub the mixture over both sides of the meat. Place the london broil in the center of the grill and cook for about 5-7 minutes on each side- depending on your preference for temperature. When done, take meat off the grill and let it sit on a cutting board for a few minutes (this keeps it juicy- don't slice it immediately!) Slice thinly against the grain & serve warm. Goes GREAT with the Garlic Sauce recipe below. (Even better the next day on sandwiches with garlic sauce instead of mayo... Yum!)
Cajun Grilled Chicken4 Chicken Breasts, Bone In
2 T Kickin' Cajun Blend
TSG Natural Sea Salt and Tricolore Peppercorns
Heat grill to medium-high heat. Rub Kickin' Cajun on both sides of the chicken breasts. Add salt and pepper to taste. Place chicken breasts, skin side down on the grill and leave for 5 minutes. Turn chicken over and cook for an additional 4 minutes, or until chicken reaches 170 - 180 degrees farenheit. Serve warm with garlic mashed potatoes and spinach salad!
Blackened Chicken with Garlic Sauce
4 Chicken Breasts, Boneless
2 T Kickin' Cajun Blend
2 T Roasted Garlic Oil
TSG Natural Sea Salt and Tricolore Peppercorns
Sauce
1/2 C Sour Cream, any style
1/4 C Mayonnaise, any style
1 T Garlic Gusto Seasoning
2 T Milk, any variety Make sauce first (recipe below.) Next, place a chicken breast in wax paper or plastic wrap and pound thin with a meat mallet or the bottom of a frying pan. Repeat on each breast. Season each breast with Kickin' Cajun seasoning. (NOTE- sprinkle the chicken with seasoning for mild heat or coat to make it really hot) Heat 2 Tablespoons of Roasted Garlic oil in a large skillet. When oil has just started to smoke, place chicken breasts on and sear, until it's brown, but not burned. Turn chicken over and repeat on the other side.
To make sauce, mix all ingredients together in a small bowl and set aside. Add more milk if it's too thick.
Set chicken on a plate and top with the sauce. Absolutely delicious!
Cajun Cocktail Sauce
1/2 C Ketchup
2 t Kickin' Cajun Seasoning
Combine all ingredients for a wonderful alternative to traditional cocktail sauce.
Cajun BBQ Sauce
1/2 C Ketchup
2 t Kickin' Cajun Seasoning
1t Honey OR Brown Sugar
Combine all ingredients to create a rich and tasty BBQ sauce that's fabulous on pork, chicken, shrimp or beef.
Spicy Roasted Potatoes
1 lb. Potatoes, any style
1/4 C TSG Roasted Garlic Oil
2 tsp. Kickin' Cajun seasoning
TSG Natural Sea Salt and Tricolore Peppercorns
Heat oven to 350 degrees. Wash and dry potatoes. Do NOT peel them (unless you feel you really need to!) Cut potatoes into bite-sized pieces (about 3/4" square.) Combine oil, seasoning, salt and pepper in a large plastic container with a lid. Put potatoes in container, put lid on and shake to coat. Dump potaotes onto a baking sheet (cookie sheet) and put in the oven. Bake for 25-35 minutes, less for soft potatoes, more for crispy potatoes. Turn potatoes 1-2 times while they are baking to crisp evenly.
Cajun Mashed Potatoes
1 lb. Potatoes, any style, washed, peeled & cut into 1/2" chunks
1-2 T TSG Roasted Garlic Oil
2 tsp. Kickin' Cajun seasoning
1/3 - 1/2 C Milk
TSG Natural Sea Salt and Tricolore Peppercorns
Place potatoes in a large pot, cover with water and boil on high heat until soft. Drain.
With a potato masher, fork or use an electric mixer to make whipped potatoes, add seasoining, milk, salt and pepper to taste and Roasted Garlic Oil instead of butter.
Serve warm and enjoy!
Flavorful Beans
1 can (approx 16 oz) Beans, any style (white, black, chick peas, etc.)
1 t Kickin' Cajun Seasoning
TSG Natural Sea Salt and Tricolore Peppercorns
Open and almost completely beans, making sure to leave just a little liquid
Add seasoning Toss seasoning with beans, being careful not to crush beans. Set aside for at least 15 minutes to let flavors blend together. Can be served at room temp or to serve warm, microwave for 2 minutes. Add salt and pepper to taste. Enjoy!
Spicy Artichoke and Spinach Appetizer
1 can (14 oz) artichoke hearts
1 T Garlic Gusto Seasoning
2 tsp. Kickin' Cajun seasoning
1 C Mayo, any style (or, for a heart-healthy version, puree 1 C cottage cheese in a blender with 1 t vinegar)
1 C Parmesan Cheese, grated
1 1/2 C fresh spinach, chopped fine (or 1 pkg frozen, thawed and drained)
Drain and chop artichoke hearts and place in a microwave safe bowl. Add mayonnaise or substitute, Parmesan, Garlic Gusto, and Cajun Seasoning. Stir until mixed well. Add spinach. Microwave for 2-3 minutes and serve warm with fresh pita chips. YUM!
Variations:
Seafood / Artichoke Appetizer: Add 1 cup shredded crabmeat, imitation crab (surimi) or salad shrimp to the recipe.
