Spices of India Recipes
Sean's Kashmiri Chicken
2 Boneless Chicken Breasts, cut into 1" cubes
2 TBSP oil
1 medium onion, chopped
1/2 C lowfat or non fat plain yogurt (or use vanilla for a sweeter taste)
1/4 C light mayonnaise
1 TBSP Spices of India
1/4 C raisins
2 T Peach or Apricot Preserves
Salted Cashews
Prepared whole grain rice
In a large skillet, heat oil until hot. Sautee onions until translucent then add chicken. Brown. Add yogurt, mayonnaise, Spices of India and raisins. Cook 5 minutes on medium until chicken is fully cooked. Add Preserves and stir until combined. Serve over rice topped with cashews.
Curried Pecans
8 TBS butter
2 TBS Spices of India
2 TBS brown sugar
1 pound pecan halves
Preheat oven to 300. Melt butter; add Spices of India and brown sugar. Remove from heat; add pecans; toss.
Place nut mixture on cookie sheet, covered with paper towels. Place in oven and turn OFF heat.
Leave in oven to dry 10-15 minutes. Salt and cool. Store in jar. A NICE and different addition to the cocktail hour or served over a salad with poached pears and Balsamic Condimenti. Enjoy!
Indian Chutney Appetizer
1 Cup Apricot or Peach Preserves
1/4 Cup of Raisins
1/4 Cup of roughly chopped nuts (pecan, cashew or walnuts)
1/2 teaspoon Spices of India
Pinch of Salt
1 8oz block of Cream Cheese, any style
Mix the first 5 ingredients together well in a bowl. Let sit at room temperature for at least one hour prior to serving. Pour mixture over cream cheese and serve with crackers. This dish is best served at room temperature as the Cream Cheese will spread easiest. Use caution, however, not to let it sit out too long. Enjoy!
Flavorful Mashed Potatoes
Prepare your mashed potatoes as you normally would (see our recipe for Roasted Garlic Mashed potatoes for easy instructions,) adding a generous pinch of any TSG herb and spice blend along with some freshly ground Tricolore Peppercorns for out of this world flavor. No more plain old potatoes!
In a hurry? Just mash the potatoes, add a little milk and a generous pat of Compound Butter you already have made.
